Once their team takes hold of these fresh ingredients, they follow authentic Japanese processes to prepare their handmade minutes fresh sushi. From the size of slices taken from their Scottish sashimi grade salmon, to their slightly soured specialist sushi rice being the perfect bed for fish or vegetables. They are proud to take all the necessary extra steps to provide great quality sushi, whilst doing their bit to be responsible in how they go about it.
